In another thread, John Rynne referenced a story about the troubles of opening up an ice cream shop in San Francisco.
It’s all very simple. Mixt Greens has seven locations. Getting all the permits is a major project that takes months. Two or three unprofitable quarters and a location has to close. Dunkin’ Donuts has teams that do nothing but handle the red tape of opening a location. A single location can survive a bad year, but if it does close, there’s another one not far away.
