Incidentally, the sourdough bagels (Apollo Bagels) for which people were waiting in line (30+ minutes) didn’t seem as good as what we get in the local strip mall from Bagel Boyz. Your mention of Apollo bagels caught my eye. I haven’t tried them but they are, supposedly, similar to Courage Bagels in Echo Park, LA, which I thought were great. They too are sourdough which I don’t think has a place in bagels (or maybe anything), but the crisp crust and airy interior were great. I’ve been working on replicating them.
